If you have dined at the Regatta recently, you have probably met and conversed with Chef and Owner Weldon Fizell. Weldon enjoys meeting with all that patronize The Regatta. He does this for two reasons: foremost he wants to hear about your experience (good, bad or indifferent) because he believes that to be successful in business you must continuously change, adapt and improve yourself to meet your guest’s wants and needs. Second; Weldon, as the Chef and Owner, wants your experience at The Regatta to be the crescendo of your week and leave you thirsting for more. Also, he greets you so he meets you the person, not the patron that ordered the Buffalo at table
64.
Weldon and his family have been pillars of the Osterville and Cotuit communities
for many years and likes to know his neighbors personally as well as his guests at The Regatta. Weldon a past President of the Osterville Anglers Club, has coached youth hockey and is involved in both the Jimmy Fund and the Joe Cronin Memorial Fishing Tournament.
Professionally, Weldon is a committed and hard working 28 year veteran of
the restaurant industry. After graduating from Johnson and Wales in Providence, Rhode Island, Weldon moved to Atlanta and began working for the Buckhead Life Restaurant Group. During his time in Atlanta, Weldon had the privilege to work with the
distinguished Michelin chef, EddieVan Meale, at 103 West, in the production of a dinner for the Chaine des Rotissuers.
So, then the next step was to try Cape Cod. He worked at The Regatta during the winter of 1990, then at the Coonamessett Inn and later moved to The Chatham Bars Inn, where he became the Executive Chef. Weldon has also been the Executive Chef at the Hyannis Port Club.
No matter where Weldon has been, through out the years, his philosophies have stayed the same; try to meet every guests needs and expectations. Most of all fine dining is an experience and so the food must be. It does not have to be new; it only has to be
prepared with the best ingredients and with the greatest of care, to delight the senses.
